Hi, I'm Margarida and I'm a Biology student from Portugal who loves being arround nature.

I decided to open to you a little of my life by sharing some of my interests, works, and everything that keeps me inspired..

Vegan Moroccan Couscous

Ingredients:

 

1 shallow cup of Moroccan couscous

2 tablets of tofu
50g of dark raisins
½ medium carrot chopped into cubes
50g peas
50g cashew nuts
½ teaspoon curry
½ teaspoon ground cinnamon
½ teaspoon of turmeric powder
1 cup (of coffee) of chopped parsley
1 liter of water
1 tablet of vegetable broth

1 orange

english sauce (or soy sauce)
Salt to taste

Preparation:

 

Chop the tablets of tofu into little cubes.

Add into a bowl the english sauce, the orange juice and the salt and leave the tofu cubes marinate in it for about 30 minutes.

Sauté the cubes of tofu in a saucepan for about 20-25 minutes.

In a pot, bring the water, the carrot, the peas and stick of vegetable broth and let it cook for ten minutes.
Add the curry, saffron, cinnamon, and salt.

Place the couscous in a bowl and hydrate it with the broth that was left to boil the vegetables
Cover the bowl and set aside. Allow five to eight minutes and loosen the grains with a fork.
Add the tofu,
the raisins, cashew nuts and parsley.

 

Serve hot or cold.
